Persian Spinach and Sesame Dip
This exotic spinach dip is great with pita bread or to dollop on chicken or chargrilled meats.

- 1 tablespoon sesame seeds
- 1 teaspoon turmeric
- 1 teaspoon sea salt
- extra virgin olive oil, as needed
- 1 onion, sliced
- 100g baby spinach leaves
- 1 cup Greek-style yogurt
- 2 tablespoons finely chopped mint
Dry fry sesame seeds and turmeric in a frypan until toasted. Remove. Heat 1 tablespoon oil and fry onions until golden brown. Remove some for garnish, add spinach to the remainder and fry until spinach has completely wilted. Snip with scissors in the pan to chop up. Allow to cool. Mix spinach with yogurt, mint, 1 tablespoon oil and half the sesame seeds. Season to taste. Serve in a bowl, garnished with onions, remaining sesame seeds and extra mint leaves.
