Pesto Lamb Cutlets

Quick, easy and tasty, especially if you use home made pesto!


Serves: 4
Preparation Time: 5 minutes
Cooking time: 10 minutes
  • 12 lamb cutlets
  • sea salt and freshly ground black pepper, to taste
  • 1/2 cup home made pesto
  • extra virgin olive oil, as needed
  • 1 tablespoon toasted pine nuts
  • juice of 1/2 lime or lemon

Season lamb cutlets just before chargrilling to your liking. Thin down pesto with olive oil to make a dressing and use to drizzle over cooked cutlets. Drizzle with lime juice and serve sprinkled with pine nuts.
