Potato and Fennel Bake
A tasty twist on scalloped potatoes.

- 1 fennel, thinly sliced
- 2 large potatoes, peeled and thinly sliced
- 1 onion, sliced into rings
- 1/2 cup cream
- 1 cup milk
- 1 cup grated smoked or vintage cheddar
- 1/2 cup fresh breadcrumbs
- olive oil, for drizzling
- paprika, for sprinkling
Retain any fennel fronds for garnish. Layer the fennel, potato and onion slices into an ovenproof dish (quiche dish or similar). Combine cream and milk and pour over vegetables. Sprinkle with cheese and breadcrumbs. Drizzle with oil and bake at 180°C for 45 minutes until golden brown and tender. Serve sprinkled with paprika and fennel fronds.
