Prosciutto and Spinach Beef Fillet
A quick and easy yet elegant roast.

- 60g baby spinach leaves, washed
- sea salt and freshly ground black pepper, to taste
- 12 slices prosciutto
- 2 tablespoons pesto
- 1 kg beef fillet, trimmed
- olive oil, for drizzling
- mustard, for serving
Place spinach in a frypan and cook until wilted, drain, squeeze out excess moisture and season. Overlap prosciutto slices on a board to match the length of the beef fillet. Season the beef and place in the centre of the prosciutto. Arrange spinach along one side of beef and use prosciutto to wrap around beef, enclosing the spinach. Place spinach side up in a baking dish. Drizzle with olive oil and season with pepper. Roast at 200°C for 35-40 minutes for medium rare or until done to your liking. Rest wrapped in foil for 15 minutes before serving carved into slices, with mustard.
