Prosciutto Beef on Pesto Mash with Roasted Tomatoes
Rare beef rolled with pesto and prosciutto on a pesto-flavoured mash.

- 4 large potatoes, peeled and quartered
- 4 x 200g thick beef fillet steaks
- salt and pepper, to taste
- 1 tablespoon olive oil
- 200g pesto
- 4 slices prosciutto
- 1 punnet cherry tomatoes
- 2 tablespoons balsamic vinegar
- 50g butter
Boil potatoes in a pot of water until very tender, drain, mash and keep warm. Season beef with salt and pepper. Heat oil in a heavy-based roasting dish and brown beef on both sides. Top each piece of beef with 1 tablespoon pesto and wrap in a slice of prosciutto. Arrange tomatoes around beef and bake at 200°C for 10 minutes or until done to your liking. Remove beef and keep warm. Deglaze pan with balsamic vinegar and reduce by half. Turn off heat and mix in butter to form a sauce. Mix remaining pesto into mashed potato and season to taste. Serve beef on top of Pesto Mash with roasted tomatoes and drizzle with balsamic sauce.
