Prosciutto Figs with Mascarpone and Pomegranate
When figs are in season, they are sensational served this way.

- 8 ripe figs, halved
- 1/4 cup mascarpone
- 8 slices prosciutto, cut in half lengthwise
- balsamic glaze, for drizzling
- 1/4 cup pomegranate seeds
- 1 tablespoon toasted pine nuts
Fill the centre of each fig half with a teaspoon of mascarpone and wrap in a piece of prosciutto. Place on a serving plate, drizzle with balsamic glaze and sprinkle with pomegranate and pine nuts.
