Pig in Ale (Pulled Pork in Dark Ale)
So this is another ode to Game Of Thrones…a slow roasted piece of pig in a dark ale, also known as pulled pork cooked in beer! Serve in rolls with coleslaw (see my Seven Kingdoms Slaw) or with mash and vegetables for a meal.
|Preparation Time:||15 minutes|
|Cooking time:||3 1/2 hours|
- 2 kg piece pork scotch fillet (pork neck)
- sea salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 8 small pickling onions, peeled and halved
- 4 cloves garlic, crushed
- 375ml bottle dark ale
- 1 cup smoky barbecue sauce
- 1 tablespoon seeded mustard
Season pork all over, heat oil in a heavy based ovenproof pot and brown on one side until golden. Turn over and add onions and garlic to the pan, sautéing as the meat browns on the second side. Add ale, bbq sauce and mustard, cover and bake at 150°C for 3- 3 1/2 hours, until the beef is very tender. Allow to rest while simmering the sauce on the cooktop for 5 minutes until reduced. Use a fork to pull apart the meat, and serve in rolls with coleslaw or with mash and vegetables.
