Pumpkin and Pistachio Freekah Salad with Maple Syrup Dresing
A delectable grain salad with the sweetness of pumpkin and maple.

Ingredients
- 500g butternut pumpkin, peeled and diced
- 1 small red capsicum, diced
- 1 small red onion, diced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon sea salt
- 1 cup freekah
- 1/2 cup shelled pistachios, chopped
- 1 small bunch coriander, chopped
- MAPLE SYRUP DRESSING
- 1/4 cup lemon juice
- 1/4 cup maple syrup
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
Method
Toss pumpkin, capsicum, onion, oil and salt together in a baking dish and roast at 200°C in the upper part of the oven for 20 minutes until golden brown. Meanwhile, place freekah, 1 litre water and 1 tablespoon salt in a saucepan, bring to the boil and boil for 15 minutes until tender. Drain, rinsing briefly, and allow to cool. Shake dressing ingredients together in a jar. Combine freekah, roasted vegetables, dressing, half the coriander and half the pistachios together. Serve in a salad bowl sprinkled with remaining pistachios and coriander.
Tips
Freekah is a cereal made from young green wheat that is roasted. It is available in specialty grocers and gourmet delis/supermarkets.
