Classic Ham and Gruyere Quiche
When quiches are home baked with buttery puff pastry, good ham, cream and tasty Gruyere cheese, there is nothing better.

- 2 sheets frozen puff pastry, thawed
- 150g grated Gruyere or Raclette cheese
- 250g finely chopped smoked ham
- 6 eggs
- 3/4 cup cream
- 3/4 cup full cream milk
Preheat oven to 180°C. Cut each sheet of pastry into four and use to line 8 x 10cm metal pie dishes, trimming the points and using them to fill the gaps. Prick base with a fork and fill with cheese and ham. Using a fork, beat eggs, cream and milk together in a jug until well combined and pour into the quiches. Bake for 40-45 minutes, lowering to the base of the oven for the last 10 minutes to crisp the pastry, until puffed and golden. Carefully remove from tins and serve with salad.
