Red Wine Chicken with Zucchini and Green Olives

A one pot dish that is full of flavour and colour.

Serves: 4-6
Preparation Time: 20 minutes
Cooking time: 45 minutes
  • 800g chicken thigh fillets, cut into 2cm pieces
  • sea salt and freshly ground black pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, crushed
  • 2 stalks celery and leaves, chopped
  • 2 potatoes, peeled and cut into 1cm dice
  • 2 tomatoes, diced
  • 1/2 cup green olives
  • 2 cups red wine
  • 2 tablespoons chopped thyme
  • 2 zucchini, halved lengthwise and sliced

Season chicken. Heat oil in a large pan and sauté chicken until browned. Add onion, garlic and celery and sauté until softened. Add potatoes, tomatoes, olives, red wine and thyme. Bring to the boil and simmer covered for 30 minutes. Add zucchini and simmer covered a further 10-15 minutes until just tender. Crush some of the potatoes with the back of a wooden spoon to thicken the sauce. Season to taste. Serve drizzled with extra olive oil and fresh thyme. Serve with crusty bread.
