Roasted Roma Tomato, Asparagus, Basil and Feta Salad
This salad is a symphony of red, white and green and is delicious served with lamb.

- 250g baby roma tomatoes
- 1 red onion, cut into wedges
- olive oil, for drizzling
- sea salt
- 1 bunch young asparagus, steamed and cut into pieces
- 1 bunch basil leaves
- 2 spring onions, chopped
- 1/2 x 350g jar marinated feta, oil reserved
- 1 tablespoon toasted pine nuts, for sprinkling
Place roma tomatoes and red onion on an oven tray, drizzle with oil, season and roast at 150°C for 1 hour. Toss asparagus, rocket and basil leaves together with a little of the reserved oil from the feta and arrange on a serving plate. Top with tomatoes, onion and feta, drizzle with feta oil and serve sprinkled with pine nuts.
