Roasted Roma Tomato, Asparagus, Basil and Feta Salad

This salad is a symphony of red, white and green and is delicious served with lamb.

Serves: 4-6
Preparation Time: 15 minutes
Cooking time: 1 hour (roasting tomatoes)
  • 250g baby roma tomatoes
  • 1 red onion, cut into wedges
  • olive oil, for drizzling
  • sea salt
  • 1 bunch young asparagus, steamed and cut into pieces
  • 1 bunch basil leaves
  • 2 spring onions, chopped
  • 1/2 x 350g jar marinated feta, oil reserved
  • 1 tablespoon toasted pine nuts, for sprinkling

Place roma tomatoes and red onion on an oven tray, drizzle with oil, season and roast at 150°C for 1 hour. Toss asparagus, rocket and basil leaves together with a little of the reserved oil from the feta and arrange on a serving plate. Top with tomatoes, onion and feta, drizzle with feta oil and serve sprinkled with pine nuts.
