Salmon Nicoise Salad with Dill Dressing

A bright, fresh French-style salad that is a meal in itself.

Serves: 4-6
Preparation Time: 15 minutes
Cooking time: 20 minutes
  • 2/3 cup extra virgin olive oil
  • 1/3 cup white wine vinegar
  • 2 tablespoons fresh chopped dill
  • sea salt and freshly ground black pepper, to taste
  • 1kg baby potatoes, unpeeled
  • 250g baby green beans, cooked
  • 250g small cherry tomatoes
  • 250g mesclun salad or cos lettuce leaves
  • 500g canned red salmon, skin and bones removed
  • 100g kalamata olives
  • 4-6 soft boiled eggs, peeled
  • extra dill leaves, for garnish

Shake oil, vinegar and chopped dill together in a jar and season. Boil potatoes until tender and cut into halves or quarters. Arrange layers of salad leaves, potatoes, beans, tomatoes, salmon and olives onto each serving plate. Drizzle with dill dressing. Top with a broken open egg and garnish with extra dill and pepper.
