Sesame Miso Chicken
This is a dish that oozes umami, bringing out the best in everyday chicken chops.

- 1/4 cup shiro miso (white miso)
- 2 tablespoons honey
- 1/4 cup mirin (sweet sake) or chinese cooking wine
- 1 tablespoon sesame oil
- 1 tablespoon lemon juice
- 2 kg chicken chops or chicken thighs, skin on
- 4 spring onions
- 2 tablespoons toasted sesame seeds
Blend miso and honey together, then mix in mirin, sesame oil and lemon juice. Place chicken chops skin side up in a large roasting dish and drizzle with miso marinade, coating well. Cut the stalky half of the spring onions into 5cm pieces and arrange around the chicken. Roast at 200°C for 45 minutes until golden brown, turning and basting occasionally. Transfer to a serving dish, drizzle with pan juices, sprinkle with chopped remaining spring onion and sesame seeds. Serve with steamed rice and asian greens.
