Smoked Chicken and Swiss Caesar Salad
Dress up Caesar with smoked chicken and Swiss style cheese.

- 1/4 cup egg mayonnaise
- 2 cloves garlic, crushed
- 1/2 cup French dressing
- 4 slices stale bread, cut into cubes
- 2 tablespoons olive oil
- 1/2 teaspoon garlic salt
- 4 rashers bacon, cut into strips
- 200g Swiss cheese
- 1 cos lettuce, torn into bite-size pieces
- 1 large smoked chicken fillet, sliced
Shake mayonnaise, garlic and French dressing together in a jar to make a dressing. To make croutons, combine bread cubes, oil and garlic salt together on an oven tray and bake at 200°C for 5 minutes until crisp and golden. Fry bacon in a non-stick pan on medium heat for 5-8 minutes until crisp and golden. Drain on absorbent paper. Cut cheese into paper-thin wedges. Arrange lettuce, smoked chicken, bacon and Swiss cheese together on a large serving platter or bowl. Drizzle with dressing and top with croutons.
•Croutons can be made up to one day ahead of time and stored in an airtight container.
•Dressing can be made up to one week ahead.
•To pack for a picnic, keep dressing and croutons in separate containers and add to salad just prior to serving.
•This recipe is also delicious with finely shaved Parmesan instead of the Swiss cheese.
