Smoky Bourbon Beef Brisket
Slow-cooked…smoky and sensational!

Ingredients
- 2 kg rolled or whole piece of beef brisket
- sea salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 2 large red onions, sliced
- 4 cloves garlic, crushed
- 1 tablespoon smoked paprika
- 1 cup bourbon
- 1 cup smoky barbecue sauce
Method
Season beef all over, heat oil in a heavy based ovenproof pot and brown on one side until golden. Turn over and add onions and garlic to the pan, sautéing as the meat browns on the second side. Add smoked paprika and sauté until aromatic. Add bourbon and bbq sauce, cover and bake at 150°C for 3- 3 1/2 hours, until the beef is very tender. Remove the string from the brisket and allow to rest while simmering the sauce on the cooktop for 5 minutes until reduced. Serve sliced brisket with sauce, mash, sweetcorn and green vegetables or slaw and Quick Onion Pickle (see below).
Tips
QUICK ONION PICKLE
Combine 1 sliced red onion, 4 sliced pickled cucumbers, 2 tablespoons red wine vinegar, 1 tablespoon sugar and 1 teaspoon salt together and allow to stand for 10 minutes.
