Sticky Pork Rashers with Maple Bourbon BBQ Sauce

These oven baked pork rashers are sweet, sticky and smoky and great served with a potato salad.

Cooking time: 1 hour
  • 1 cup BBQ sauce
  • 1/2 cup maple syrup
  • 1/4 cup French mustard
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1.5 kg pork rashers (pork belly slices)
  • 1/4 cup bourbon

Combine BBQ sauce, maple syrup, mustard, Worcestershire sauce and paprika together. Use half the mixture to coat the pork rashers and place on a rack on an oven tray. Add one cup of water to the tray and roast pork at 170°C for 30 minutes. Increase heat to 200°C and roast for 15 minutes, turn over and roast a further 15 minutes. Meanwhile, bring remaining marinade to the boil and simmer for 5 minutes, stir in bourbon and allow to cool. Brush cooked pork with sauce and serve with the remaining sauce on the side.
