Sweet Potato Fritters with Coriander Yogurt
Crunchy bite sized sweet potato fritters.

- 200g grated orange sweet potato (kumera) or pumpkin
- 1 spring onion, chopped
- 1 teaspoon ground cumin
- ¼ cup self-raising flour
- 1 teaspoon salt
- freshly ground black pepper, to taste
- 2 eggs
- olive oil, for frying
- 1 cup natural yogurt
- ½ cup finely chopped coriander leaves
- extra coriander, for garnish
Combine sweet potato, spring onion, cumin, flour, salt, pepper and eggs together. Shallow fry small spoonfuls of mixture in hot oil for 2 minutes on each side until golden. Drain on absorbent paper. Meanwhile, combine yogurt with coriander and season to taste. Serve fritters dolloped with Coriander Yogurt.
