Tiramisu Celebration Cake
Tiramisu is a always a favourite and when it gets turned into a celebration cake, it is definitely a party pleaser.

- 1 1/4 cups hot strong espresso coffee
- 1/4 cup caster sugar
- 1/4 cup marsala or coffee liqueur
- 6 eggs
- 1 1/4 cups caster sugar
- 1 cup self raising flour
- 1/2 cup cornflour
- 250g mascarpone
- 1 cup cream
- 2 tablespoons caster sugar, extra
- cocoa, for dusting
- 125g dark chocolate, shaved with a peeler
Reserve 1/4 cup coffee for sponge and combine remainder with sugar and marsala until dissolved and allow to cool.
To make Coffee Sponge:
Beat eggs and sugar together until thick and creamy (approximately 10 minutes). Sift flour and cornflour onto the surface of the mixture and gently fold in. Pour the reserved coffee down the side of the bowl and fold in. Pour into a buttered and lined 25cm round cake tin. Bake at 180°C for 30-40 minutes or until golden and cooked when tested. Remove from tin and allow to cool on a wire rack.
To make Mascarpone Cream:
Whip mascarpone, cream and extra sugar together until soft peaks form.
Cut sponge into three layers. Arrange base on a serving platter and cover the rim of the platter with baking paper to keep it clean while decorating. Brush sponge with coffee syrup. Spread with 1/3 Mascarpone Cream, sprinkle with cocoa and grated chocolate. Repeat layers twice, finishing with grated chocolate. Remove baking paper. Refrigerate for at least 30 minutes before serving.
