Veal Schnitzel with Gremolata Crumbs
Classic veal schnitzel with a garlic, herb and lemon crumb.

- 2 lemons
- 3 cups panko breadcrumbs
- 2 tablespoons chopped fresh herbs (parsley, thyme, basil or rosemary)
- 3 cloves garlic, crushed
- 1 kg veal schnitzel steaks
- 1 cup seasoned flour
- 2 eggs, lightly beaten
- extra light olive oil, for frying
Finely grate the rind of the lemons and combine with breadcrumbs, garlic and herbs. To crumb veal steaks, coat in flour, dip in egg and press into breadcrumb mixture until well coated. Place on a wire rack for 10 minutes to set. Shallow fry in hot oil for 5 minutes on each side, until golden brown. Drain on absorbent paper and serve with remaining lemons cut into wedges.
