Vegetable Filo Tart

Colourful veggies in a quiche made with crisp layers of filo pastry.

Serves: 8
Preparation Time: 20 minutes
Cooking time: 45 minutes
  • 1 red onion, finely diced
  • 1 large zucchini, grated
  • 1 carrot, grated
  • 1 tomato, diced
  • 2 tablespoons chopped dill or parsley
  • 8 eggs
  • 3/4 cup cream
  • 1 teaspoon salt
  • 12 sheets filo pastry
  • 100g butter, melted
  • 1 cup grated cheddar cheese

Combine onion, zucchini, carrot, tomato and dill together. Lighty whisk eggs, cream and salt together. Brush filo pastry sheets with melted butter, and lay into a 32cm quiche dish as you go, overlapping the pastry to cover the base and sides, ruffling as needed. Arrange vegetables and cheese over pastry and pour over egg mixture. Bake at 180°C for 30-40 minutes until set, lowering to the base of the oven towards the end of the cooking time to crisp the base if needed.
