Warm Beetroot, Feta and Mint Salad

Serves: 4-6
Preparation Time: 15 minutes
Cooking time: 1 hour
  • 1 kg medium beetroot
  • extra virgin olive oil, for drizzling
  • sea salt and freshly ground black pepper, to taste
  • 1 large red onion, peeled, cut into wedges
  • balsamic glaze, for drizzling
  • 100g feta cheese
  • 1/2 bunch mint leaves

Scrub and trim the beetroot, keeping some of the stems. Place in a roasting dish, toss with olive oil and salt, cover with foil and roast at 200°C for 45 minutes. Allow to cool. Cut each beetroot into 4, add onion wedges to the pan, drizzle both with oil and season with salt. Roast 200°C for 15 minutes until tender. Transfer to a serving dish, drizzle with balsamic glaze, top with feta, drizzle with oil, sprinkle with pepper and serve garnished with mint.
