Zaatar Manakish – Lebanese Spiced Pita Bread
These easy-to-make spiced flatbreads are delicious to accompany any Middle Eastern dish.

- 1 tablespoon sesame seeds
- 1 tablespoon dried thyme
- 1 teaspoon sumac
- 1 teaspoon sea salt
- 2 tablespoons extra virgin olive oil
- 1 large pita bread, pide or plain thin pizza base
Dry fry sesame seeds in a frypan until toasted. Take off heat and mix in thyme, sumac and salt. Stir into olive oil and use to spread over pita bread. Bake at 200°C for 10 minutes until golden brown. Cut into wedges and serve.
