Ham and Zucchini Muffins (aka Zucchini Slice)
The good ol’ zucchini slice recipe is transformed into individual savoury muffins.

- 400g zucchini, grated
- 200g chopped ham
- 1 cup grated vintage cheddar cheese
- 3 spring onions or 1 small onion, chopped
- 1/4 cup chopped fresh dill or parsley
- 1 cup self raising flour
- 5 eggs
- 1/4 cup light olive oil
- sea salt and freshly ground black pepper, to taste
- 6 cherry tomatoes, halved
Grease and line the base of 12 muffin pans with baking paper, otherwise the muffins will stick. Combine zucchini, ham, cheese, spring onions, dill and flour together. Mix in eggs and oil and season. Pour mixture into muffin pans and place cherry tomato halves on top, cut side up. Bake at 180°C for 30-35 minutes until set and golden brown. Allow to stand for 5 minutes before carefully removing from pans.
A whole Zucchini Slice may be made in a greased 25cm round non-stick springform pan, quiche dish or 30 x 20cm lamington tin. Bake at 180°C for 30 minutes.
