Egyptian Fattoush Salad

I vividly remember my first taste of this salad in Cairo, just before we headed out to see the after dark sound and light show at The Sphinx. It was delivered to our table on a giant tray, balanced high on the waiter’s shoulder, that was laden with an assortment of Middle Eastern mezze. It combines freshness and crunch in the most textural way, and the last minute tossing together is essential to keep the vegetables vibrant and the pita crisps as crunchy as possible.
