Stuffed Zucchini Flowers with Basil Oil and Chilli

When I see zucchini flowers appear in the garden, I just have to have them. Unfurling the blossom to fill it with a surprise centre is such a satisfying thing. They are then dipped in a simple beer batter and fried to crispness, just before serving with basil oil and chilli sauce.

Homemade Gnocchi with Wild Mushroom Sauce

Therapeutic in the making and the eating, gnocchi always brings the family together. We have had many plates of hand-rolled gnocchi at my mum-in-law's table over the years, served with her famous polpette on the side. This is my version with a very sensuous wild mushroom sauce that is my pasta loving son's fave.

King Prawn Pâté with Tortilla Crisps

This elegant answer to boring old dip - deliciously decadent prawns and mascarpone served with crisp tortilla chips. When I want to glam it up a little more for cocktail parties, I serve the prawn pâté with lavosh crackers and salmon caviar.
