‘Game Of Thrones’ Winterfell Soup (Winterstrone)

This hearty, slow simmered soup as the perfect bowl to tuck into while watching the Battle Of Winterfell episode in the final series of ‘Game Of Thrones’…but for everyone else, it’s just a really good beef and vegetable winter soup – or “Winter-strone”!12

Preparation Time: 30 minutes
Cooking time: 2 1/2 hours
  • 1.5 kg chuck braising steak or gravy beef, cut into 2cm cubes
  • sea salt and freshly ground black pepper
  • olive oil
  • 3 litres beef stock
  • 3 large onions, chopped
  • 4 stalks celery, chopped
  • 6 cloves garlic, crushed
  • 6 cloves garlic, crushed
  • 1 ½ cups barley or dried beans, rinsed
  • 5 large carrots, peeled and grated
  • 2 large potatoes, peeled and cubed
  • continental parsley, for garnish

Season beef with salt and pepper. Heat 2 tablespoons of oil in a large stock pot and brown beef in two batches, removing all the beef and juices and adding extra oil if needed, before browning the second batch and removing. Heat another 2 tablespoons of oil and sauté onions, celery and garlic until softened. Add stock, beef and juices, barley and carrot bring to a boil, then simmer uncovered for 1 ½ hours until beef is very tender. Add potato and simmer for a further one hour. Season to taste and garnish with parsley and serve with crusty bread.


Note: you will need a very large soup pot for this quantity
