Creamy Pumpkin and Leek Soup
There is nothing more comforting than a delicious bowl of pumpkin soup!

- 50g butter
- 1 leek, sliced
- 1/2 butternut pumpkin, peeled and chopped
- 1 litre chicken stock
- 1 cup milk
- sea salt and freshly ground black pepper, to taste
- cream and parsley leaves, for serving
Melt butter in a large pot and sauté leeks for 2 minutes over medium heat until tender. Add pumpkin and sauté a further 5 minutes. Add stock and bring to the boil. Simmer covered for 20 minutes until pumpkin is very tender. Puree with a stab blender until smooth, stir in milk and season to taste. Serve with a swirl of cream and sprinkle of parsley leaves.
