Death By Chocolate Pudding

This deep, dark chocolate self-saucing pudding lives up to its name.

  • 1 1/2 cups self raising flour
  • 1/3 cup dark dutch cocoa powder
  • 1 1/2 teaspoons mixed spice
  • 3/4 cup dark brown sugar
  • 2 eggs
  • 2/3 cup extra virgin olive oil
  • 3/4 cup milk
  • 1 cup dark brown sugar, extra
  • 1/4 dark Dutch cocoa power, extra
  • 200g dark choc chips
  • 2 1/4 cups boiling water
  • double cream, for serving

Grease a 3 litre pudding dish. Combine flour, cocoa, mixed spice and brown sugar together in a bowl. Make a well in the centre and stir in eggs, extra virgin olive oil and milk until smooth and pour into pudding dish. Combine extra brown sugar, cocoa and choc chips together and sprinkle on top. Pour boiling water evenly over the top and bake at 180°C for 20 minutes until risen and top is firm to the touch. Stand for 5 minutes. Serve with double cream.
