Garlic and Thyme Pork Steaks on Roasted Vegetables

An easy tray bake of pork steaks over a mix of roasted fennel, celery, capsicum, zucchini and tomato.

  • 6 cloves garlic
  • juice of 1/2 lemon
  • 1 teaspoon smoked paprika
  • fresh thyme
  • extra virgin olive oil, for drizzling
  • 4 pork steaks
  • sea salt and freshly ground black pepper, to taste
  • 1 bulb fennel, cut into wedges
  • 1 red onion, cut into wedges
  • 1 red capsicum, cut into pieces
  • 2 stalks celery, cut into 5cm lengths
  • 2 zucchini, cut into chunks
  • 2 tomatoes, cut into chunks

Crush 2 cloves garlic. Combine with lemon juice, paprika, 1 tablespoon thyme leaves, 2 tablespoon oil and 1/2 teaspoon salt and use to marinate pork. Toss zucchini and tomato with oil, salt and 1 teaspoon thyme leaves and allow to stand. Coat fennel, onion, capsicum and celery with oil in a roasting tray, season and add a few thyme sprigs. Roast at 200°C for 20 minutes. Add zucchini and tomatoes to vegetables, and nestle pork steaks in between. Cook under a hot grill or in the upper part of the oven at 200°C for 10-15 minutes until golden and cooked to your liking. Serve sprinkled with pepper and extra thyme.
