Heirloom Tomato, Buffalo Mozzarella and Olive Salad

A sensational Summer salad of ripe assorted tomatoes, creamy buffalo mozzarella and glossy black olives.

Serves: 4
Preparation Time: 5 minutes
  • 400g assorted heirloom tomatoes
  • 125g buffalo mozzarella
  • sea salt and freshly ground black pepper, to taste
  • 50g kalamata olives
  • extra virgin olive oil, for drizzling
  • balsamic glaze, for drizzling
  • 1/4 cup basil leaves

Slice, halve or cut tomatoes into wedges and arrange on serving plates. Tear buffalo mozzarella into pieces and arrange over tomatoes with olives. Season with salt and pepper. Drizzle liberally with oil and balsamic glaze. Sprinkle with basil leaves and serve.
