Lamb Shank Navarin

Lamb shanks get a French makeover in this classic lamb and vegetable slow cooked wonder.

Preparation Time: 20 minutes
Cooking time: 2 hours
  • 4 stalks celery and leaves
  • 2 teaspoons paprika
  • 1/4 cup seasoned flour
  • 6 frenched lamb shanks
  • 2 tablespoons oil
  • 1 leek, sliced
  • 1 bunch Dutch carrots, scrubbed and trimmed
  • 6 small new potatoes, unpeeled
  • 1 cup red wine
  • 400g can peeled tomatoes
  • 1 litre beef stock
  • 1/2 cup frozen peas

Cut the celery stalks into 5cm batons and retain the leaves for later. Add paprika to seasoned flour and use to coat lamb shanks. Heat oil in a large ovenproof casserole dish and sauté leeks until softened. Add celery, carrots, potatoes, wine, tomatoes and stock and bring to the boil. Cover and bake at 160°C for 2 hours until the lamb is very tender. Transfer to the stovetop and simmer uncovered for 10 minutes until slightly thickened. Stir in peas and celery leaves and simmer for 1 minute. Serve with crusty bread.
