Oval Brie with Honeyed Chilli Cashews and Sesame Crisps

Sweet , crunchy and spicy nuts are great with brie.

Serves: 4
Preparation Time: 15 minutes
Cooking time: 15 minutes
  • 125g brie
  • ¼ cup honey
  • 1 fresh red chilli, sliced
  • chilli flakes, optional
  • ¼ cup roasted salted cashews
  • 1 large pita bread, split in half
  • olive oil spray
  • sesame seeds, for sprinkling
  • salt, for sprinkling
  • paprika, for sprinkling

Remove brie from refrigerator one hour before serving to come to room temperature. Heat honey and sliced chilli together and add chilli flakes to taste. Stir in cashews and allow to cool. Spray pita bread with olive oil on both sides. Sprinkle the inner side of the pita with sesame seeds, salt and paprika and cut into thin wedges. Place on an oven tray and bake at 200°C for 5-10 minutes until crisp and golden. Serve brie topped with Honeyed Chilli Cashews and accompanied with Sesame Crisps.
