Torn Bread Pudding
Leftover bread turns into a comforting dessert.

- 4 cups torn bread (French or Italian style bread)
- 1/4 cup currants
- 50g dark chocolate, chopped or choc bits
- 3 eggs
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla extract
- 2 cups milk
- 50g butter, melted
- cinnamon, for sprinkling
Arrange bread in a baking dish and sprinkle evenly with currants and chocolate. Whisk eggs, sugar and vanilla together with a fork and mix in milk. Pour over bread, drizzle with butter and sprinkle with cinnamon. Bake at 180°C for 25-20 minutes until custard is set and bread is golden. Serve with cream or ice cream.
Substitute currants with chopped dried apricots and white chocolate for dark.
Use 1 punnet blueberries in place of currants and chocolate.
