Feta Pilaf

Pilaf-style rice flavoured with creamy feta.

Serves: 4
Preparation Time: 5 minutes
Cooking time: 30 minutes
Ingredients
  • 50g butter
  • 1 tablespoon olive oil
  • 2 cups long grain rice
  • 1 litre chicken stock
  • 200g feta cheese, crumbled
Method

Heat butter and oil in a large saucepan until melted. Add rice and cook until opaque and lightly toasted. Meanwhile heat the stock, then add to the rice, bring to the boil and simmer covered over low heat for 10 minutes. Do not remove lid during this time. Turn off heat and allow to stand covered for a further 10 minutes. Rice should be cooked and all liquid absorbed by this stage. Fluff with a fork, stir in feta, leaving some to garnish the top, and serve.
