Lockdown Linguine – Tuna, Pea and Lemon Linguine
Born out of Melbourne’s Lockdown 5, this perfect easy pasta dish when there is not much in the fridge!

- 250g linguine
- 50g butter
- 1 x 425g can tuna in oil
- 4 spring onions, chopped
- 1/2 cup frozen peas
- 1 cup cream
- grated rind and juice of 1/2 lemon
- sea salt and freshly ground black pepper, to taste
- grated parmesan, for serving, optional
Cook the linguine in a pot of salted boiling water until al dente. Drain, reserving 1 cup of the pasta water. Reserve a few spring onions for garnish. Melt butter in the pot, add the drained oil from the tuna, spring onions and peas and sauté for 1 minute. Add cream, grated lemon rind and juice and simmer until slightly thickened. Stir in linguine and flaked tuna and coat in the sauce, adding some of the pasta water, if needed. Season. Serve sprinkled with reserved spring onions and pepper. Serve with parmesan if using.
