Warm Potato and Leek Salad
This warm potato salad is tossed with sweet leeks, mustard and dill and finished with crispy bacon.

- 1 kg new red potatoes
- 4 rashers streaky bacon, finely sliced
- extra virgin olive oil, as needed
- 1 leek, sliced
- 2 tablespoons seeded musatrd
- 2 tablespoons chopped dill
- sea salt and freshly ground black pepper, to taste
- extra dill, for garnish
Cook potatoes in a pot of salted boiling water for 20-25 minutes until tender. Drain, cut in half and keep covered. Fry bacon in the pot until crisp, drain on absorbent paper. Heat 1 tablespoon oil and sauté leek over medium heat for 10 minutes until soft. Turn off heat. Mix in mustard and 1/4 cup oil and add potatoes and dill, tossing to coat. Season to taste and serve sprinkled with bacon, pepper and extra dill.
If making an hour or so ahead of serving, boil potatoes and leave immersed in water to stay warm until ready to assemble the salad.
