Whole Snapper with Ginger, Soy and Sesame

A beautifully baked fish, swimming in Asian flavours never disappoints.

Serves: 4
Preparation Time: 10 minutes
Cooking time: 45 minutes
  • 1/4 cup soy sauce
  • 1/2 cup Chinese rice wine
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 1.2 -1.4 kg whole snapper, cleaned and trimmed
  • 4 slices ginger
  • 4 spring onions, sliced diagonally
  • 1 tablespoon toasted sesame seeds

Combine soy, wine, sesame oil and grated ginger together. Tuck the sliced ginger and half the spring onions in the cavity of the fish. Place on a baking paper lined oven tray. Pour the soy mixture in the cavity and all over the fish. Cover the tray with foil and bake at 200°C for 45 minutes. Transfer onto a serving platter, sprinkle with spring onions, pour over the pan juices and serve sprinkled with sesame seeds.


Serve with steamed rice and Asian greens.
