Chick Pea, Rocket and Feta Salad with Chilli Pesto Dressing
This salad makes a good side or pack it and take it to work for lunch.

- 2 tablespoons chilli pesto
- 190g jar char-grilled capsicums
- 120g rocket leaves
- 400g can chick peas
- 1 punnet cherry tomatoes, halved
- 200g feta cheese
Drain capsicums, reserving 1 tablespoon oil, and chop. Drain and rinse chick peas. Combine pesto with reserved oil to make a dressing. Gently toss rocket, capsicum, chick peas, cherry tomatoes and dressing together and arrange on a serving platter. Top with crumbled feta pieces and serve.
