Saucy Butterscotch Dumplings

My version of old school Golden Syrup Dumplings flavoured with honey, cinnamon and toasted almonds.

Serves: 4
Preparation Time: 10 minutes
Cooking time: 15 minutes
  • 2 cups water
  • 1 cup dark brown sugar
  • 3 tablespoons honey
  • 100g butter, cubed
  • 1 1/2 cups self raising flour
  • 3/4 cup milk
  • cinnamon, for sprinkling
  • toasted slivered almonds, for garnish
  • vanilla ice cream, fo serving

Combine water, sugar, 2 tablespoons honey and 50g butter in a large saucepan and bring to the boil. Place flour in a bowl and rub in remaining butter with your fingertips. Make a well in the centre and mix in milk and 1 tablespoon honey. Spoon tablespoonfuls of mixture into simmering sauce and simmer uncovered for 10-15 minutes until dumplings are soft, pillowy and cooked in the centre. Sprinkle with cinnamon and toasted almonds and serve warm with ice cream.
