Zoodles with Tomatoes, Olives and Feta
Zucchini noodles tossed with vibrant tomato and zesty olives and feta make a delicious meat-free meal or colourful side dish.

- 1 tablespoon olive oil
- 1 clove garlic, crushed
- 250g zucchini noodles
- 1/2 punnet cherry tomatoes, halved
- 1/4 cup pitted black olives
- 2 spring onions, chopped
- 100g feta cheese, crumbled
- sea salt and fre
Heat the oil in a large frypan and sauté garlic until softened. Add zucchini noodles, tomatoes, olives and spring onions and sauté for a few minutes until zucchini is just softened but still bright green, taking care not to overcook. Season and serve sprinkled with feta cheese and a drizzle of extra virgin olive oil.
Pan fry chicken fillets or steak, slice and serve over zoodles.
