Chick Pea, Rocket and Feta Salad with Lemon Oregano Dressing
A bright and nourishing salad with a Greek twist.

- 1 red capsicum
- 120g rocket leaves
- 400g can chick peas
- 1 punnet cherry tomatoes
- 100g feta cheese
- Greek oregano, for sprinkling
- LEMON OREGANO DRESSING
- 1 clove garlic
- 2 tablespoons lemon juice
- 1/4 cup extra virgin olive oil
- 1 teaspoon Greek oregano
- sea salt and freshly ground black pepper, to taste
Chargrill capsicum over high heat until charred on all sides. Wrap in foil and allow to cool, before removing skin and seeds and tearing into strips. Shake all ingredients for dressing together in a jar and season. Drain and rinse chick peas. Halve cherry tomatoes. Gently toss rocket, capsicum, chick peas, cherry tomatoes and dressing together and arrange on a serving platter. Top with crumbled feta pieces and serve sprinkled with extra oregano.
