Choc Chip Banana Muffins

Whip up a batch of these when you have overripe bananas to use up!

Makes:

12 muffins

Prep Time: 15 minutes

Cooking Time: 15-20 minutes

Ingredients

  • 180g butter, cubed
  • 3 ripe bananas, mashed
  • 1 cup dark brown sugar, firmly packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups self raising flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon nutmeg
  • 3/4 cup choc chips

Method

  • Melt butter in a large bowl in the microwave on Medium for 1-2 minutes until melted. Stir in bananas, sugar, eggs and vanilla. Sift flour and spices over the surface and fold in. Stir in 1/2 cup choc chips.
  • Spoon into 12 muffin cases in a muffin pan and sprinkle with remaining choc chips.
  • Bake at 180°C for 15-20 minutes or until golden brown and a skewer inserted into the centre comes out clean. Allow to stand for 5 minutes before turning out onto a cooling rack.

Tips

  • Muffins freeze very well for up to 3 months.
  • STYLING Use the mini choc chips if you can find them.
  • DRINK Your favourite cup of coffee!
