Choc Chip Banana Muffins
Whip up a batch of these when you have overripe bananas to use up!
Makes:
12 muffins
Prep Time: 15 minutes
Cooking Time: 15-20 minutes
Ingredients
- 180g butter, cubed
- 3 ripe bananas, mashed
- 1 cup dark brown sugar, firmly packed
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups self raising flour
- 1 tablespoon ground cinnamon
- 1 teaspoon nutmeg
- 3/4 cup choc chips
Method
- Melt butter in a large bowl in the microwave on Medium for 1-2 minutes until melted. Stir in bananas, sugar, eggs and vanilla. Sift flour and spices over the surface and fold in. Stir in 1/2 cup choc chips.
- Spoon into 12 muffin cases in a muffin pan and sprinkle with remaining choc chips.
- Bake at 180°C for 15-20 minutes or until golden brown and a skewer inserted into the centre comes out clean. Allow to stand for 5 minutes before turning out onto a cooling rack.
Tips
- Muffins freeze very well for up to 3 months.
- STYLING Use the mini choc chips if you can find them.
- DRINK Your favourite cup of coffee!
