Coriander Turkey Meatballs in Satay Sauce
Turkey mince makes great meatballs, especially when smothered in a peanut satay sauce.

Ingredients
- 500g turkey or chicken mince
- 2 spring onions, finely chopped
- 1/2 cup chopped coriander
- 3 teaspoons fish sauce
- grated rind of 1 lime or lemon
- 1/2 cup short grain rice
- 1 egg
- crispy fried shallots and coriander leaves, for garnish
- SATAY SAUCE
- 1 tablespoon peanut or vegetable oil
- 1 small onion, finely diced
- 1 clove garlic, crushed
- 1 cup crunchy peanut butter
- 270ml can coconut milk
- 2 cups water
- 2 teaspoons fish sauce
- 1-2 red chillies, chopped
- juice of 1 lime or lemon
Method
- Combine the turkey, spring onions, coriander, fish sauce, lime rind, rice and egg together.
- To make the Satay Sauce, heat the oil in a deep ovenproof pan and sauté onion and garlic until softened. Add remaining ingredients and cook, stirring until smooth and simmer for 5 minutes.
- Form the mince mixture into 12 meatballs and add to the simmering sauce. Cover and bake at 180°C for 30 minutes, until the rice in the meatballs is cooked.
- Portion into bowls, sprinkle with crispy shallots and coriander and serve with steamed carrots and beans.
