Coriander Turkey Meatballs in Satay Sauce

Turkey mince makes great meatballs, especially when smothered in a peanut satay sauce.

Ingredients

  • 500g turkey or chicken mince
  • 2 spring onions, finely chopped
  • 1/2 cup chopped coriander
  • 3 teaspoons fish sauce
  • grated rind of 1 lime or lemon
  • 1/2 cup short grain rice
  • 1 egg
  • crispy fried shallots and coriander leaves, for garnish
  • SATAY SAUCE
  • 1 tablespoon peanut or vegetable oil
  • 1 small onion, finely diced
  • 1 clove garlic, crushed
  • 1 cup crunchy peanut butter
  • 270ml can coconut milk
  • 2 cups water
  • 2 teaspoons fish sauce
  • 1-2 red chillies, chopped
  • juice of 1 lime or lemon

Method

  • Combine the turkey, spring onions, coriander, fish sauce, lime rind, rice and egg together.
  • To make the Satay Sauce, heat the oil in a deep ovenproof pan and sauté onion and garlic until softened. Add remaining ingredients and cook, stirring until smooth and simmer for 5 minutes.
  • Form the mince mixture into 12 meatballs and add to the simmering sauce. Cover and bake at 180°C for 30 minutes, until the rice in the meatballs is cooked.
  • Portion into bowls, sprinkle with crispy shallots and coriander and serve with steamed carrots and beans.
