Baked Sausage, Ricotta and Basil Penne

Baked Penne
A tasty pasta bake that can be cooked in a flash.

Serves:

4-6

Prep Time: 10 minutes

Cooking Time: 40 minutes

Ingredients

  • 500g penne pasta
  • sea salt and pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 1 onion, finely diced
  • 250g Italian style pork sausages, sliced
  • 1/2 cup red wine
  • 750ml bottle passata
  • 1/2 cup chopped basil
  • 500g fresh ricotta
  • 125g grated mozzarela

Method

  • Cook pasta in a large pot of boiling salted water until al dente and drain.
  • Heat oil in pot and sauté onion and sausages until golden. Deglaze pan with wine and add tomato passata. Simmer for 5 minutes and season to taste.
  • Stir in pasta and basil, and transfer to an ovenproof dish. Season the ricotta with salt and break up with a fork. Dot the pasta with spoonfuls of ricotta and sprinkle with mozzarella.
  • Bake at 200°C for 15 minutes until cheese is melted and golden.

Tips

  • Substitute sausages with 1 cup pitted black olives for a vegetarian alternative.
  • STYLING Sprinkle with basil leaves and pepper before serving.
