Garlic and Oregano Pork Short Ribs

Slow cooking the pork short ribs in this tasty marinade before finishing on the grill is the secret to charred ribs that also fall off the bone.

Prep Time: 15 minutes

Cooking Time: 3 hours slow cooking plus 15 minutes griling

Ingredients

  • 6 pork short ribs on the bone, membrane removed
  • fresh oregano, for garnish
  • GARLIC OREGANO MARINADE
  • 6 cloves garlic, crushed
  • 3/4 cup lemon juice
  • 1/2 cup honey
  • 1 tablespoon sea salt
  • 1 1/2 tablespoons dried Greek oregano
  • 2 teaspoons smoked paprika

Method

  • Combine all marinade ingredients together and use to coat pork short ribs.
  • Line a roasting pan with baking paper and arrange short ribs and marinade on top. Cover with a second sheet of baking paper and cover the all pan with foil. Slow cook at 150°C for 3 hours.
  • Just before serving, grill for few minutes on each side until golden, brushing with the marinade. Serve sprinkled with oregano leaves.

Tips

  • Ribs can be slow cooked the day before and finished under the grill before serving.
  • STYLING Pile ribs onto a serving plate, drizzle with pan juices and garnish with oregano leaves and a shake of paprika.
