Mexi-Bake

This easy tex-mex flavoured bake makes for a satisfying midweek dinner and also freezes well.

Serves:

Cooking Time: 20 minutes

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely diced
  • 500g beef mince
  • 1 green capsicum, diced
  • 1 pkt chili con carne or taco seasoning
  • 400g can chopped tomatoes
  • 1/2 cup water
  • 400g can black beans or red kidney beans, drained and rinsed
  • 400g can corn kernels, drained
  • 250g grated 4 cheese blend or cheddar cheese
  • 1 cup crushed corn chips
  • sour cream, for serving
  • 1 small avocado, diced
  • Coriander, for garnish

Method

  • Heat oil in a large frypan and sauté onion until softened. Add mince and cook until lightly browned. Add seasoning and capsicum and sauté until softened. Add tomatoes, water and beans and simmer for 10 minutes.
  • Spoon into a lasagne dish, top with corn, cheese and crushed corn chips. Bake at 200°C for 15 minutes until golden.
  • Serve dolloped with sour cream and topped with avocado and coriander.

Tips

  • Portion into 6 ramekins and freeze as individual serves.
  • STYLING Dollop with sour cream just before serving.
  • DRINK Mexican beer or margaritas
