Charred Zucchini with Dill Lemon Dressing with Toasted Almonds

Charred zucchini ribbons just sing with a lemony dressing imbued with the freshness of dill.

Serves:

Cooking Time: 15 minutes

Ingredients

  • 2 zucchini
  • Olive oil spray
  • sea salt and pepper, to taste
  • juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 small clove garlic, crushed
  • 1 tablespoon chopped dill
  • 1 teaspoon whole grain mustard
  • 1 tablespoon toasted flaked almonds
  • dill sprigs, for garnish

Method

  • Cut zucchini lengthwise into thin slices. Spray with oil on both sides and season.
  • Cook on a chargrill pan until grill marks appear then turn over and cook on the other side. The zucchini should be cooked enough to bend but still retain its brightness.
  • Arrange onto a serving plate. Drizzle with Dill Dressing and serve sprinkled with almonds, dill sprigs and pepper.
  • DILL DRESSING Shake lemon juice, olive oil, garlic, dill and mustard together in a screw top jar to make dressing.

Tips

  • Use mint instead of dill, and add charred capsicum for colour.
  • STYLING Gently curl the zucchini and build it on top of each other onto the plate before dressing.
  • DRINK Pinot Grigio
