Chilli Honey Chicken Fajitas with Sour Cream
These speedy chicken fajitas are bursting with brightness and flavour.

Cooking Time: 10 minutes
Ingredients
- 2 tablespoons oil
- 1 red onion, sliced
- 1 small red capsicum, sliced
- 250-300g chicken thigh fillets, cut into strips
- 1 x 60g sachet Capsicana Mexican Fajita Chilli & Honey Cooking Paste
- 4 large soft tortillas
- sour cream and fresh coriander, for serving
Method
- 1. Heat oil in a large frypan and sauté onion and capsicum for 2 minutes until softened. Add chicken strips and sauté for 5 minutes until lightly browned and cooked through.
- 2. Stir in Mexican Fajita Cooking Paste and 1 tablespoon water and cook until heated through.
- 3. Warm tortillas, fill with chicken fajitas and roll up to enclose. Serve with sour cream and coriander leaves.
Tips
Use a combination of red, green and/or yellow capsicums for colour.
