Chipotle Chicken and Pineapple Skewers

Tasty skewers with bold Mexican flavours are perfect on the barbecue or chargrill.
Serves:

Prep Time: 15 minutes
Cooking Time: 10 minutes
Ingredients
- 250-300g chicken thigh or breast fillet, cut into 2cm cubes
- 1 x 28g sachet Capsicana Mexican Chipotle Fajita Mix
- 1 small red capsicum, cut into 2cm squares
- 4 slices fresh or canned pineapple, cut into 2cm pieces
- 4 skewers
- black beans and rice*, for serving
- coriander, for garnish
Method
- 1. Sprinkle the chicken with the Chipotle Fajita Mix and thread alternately onto skewers with capsicum and pineapple pieces.
- 2. Cook on a lightly oiled barbecue or chargrill for 3-5 minutes on each side until done to your liking.
- 3. Serve over black beans and rice.
Tips
- Use a combination of red, green and/or yellow capsicum for colour.
- *BLACK BEANS AND RICE Combine 1/2 cup long grain rice, 1/2 teaspoon salt and 3/4 cup water in a bowl and cook in the microwave on High for 8-10 minutes until cooked. Stir in 1/2 cup drained and rinsed black beans or red kidney beans and 1 tablespoon oil.
