Spicy Salmon and Avocado Tacos with Coriander Slaw

Delicious mildly spiced fish tacos and crunchy slaw in soft tortillas.
Serves:
4
Prep Time: 15 minutes
Cooking Time: 10 minutes
Ingredients
- 2 cups finely shredded red cabbage
- 1/4 cup chopped coriander
- 2 limes or lemons
- 1 large avocado, diced
- oil, for drizzling
- 2 x 200g pieces skinless salmon
- 1 x 28g sachet Mexican Tasty Taco Seasoning Mix
- 8 mini soft tortillas
Method
- 1. Combine cabbage, chopped coriander and juice of 1 lime to make slaw. Combine diced avocado with the juice of the second lime.
- 2. Rub a little oil over the salmon and sprinkle all over with Mexican Tasty Taco Seasoning Mix. Place on a baking paper lined tray and bake at 200°C for 8-10 minutes until just cooked.
- 3. Warm the tortillas and fill with slaw, avocado and pieces of flaked salmon, folding into quarters for presentation. Serve with extra lime wedges.
Tips
Any firm white fish can be substituted for salmon.
